Easy Chicken recipe, lemon Basil chicken

This gluten free easy chicken recipe is simple to prepare and also yummy. Olive oil, garlic, lemon juice, olives and fresh basil leaves give this chicken breast recipe a superb flavour that is finger licking good. Only one prerequisite – make sure your fingers are clean. Try replacing chicken with some white fish – mmmmm!

SERVES: 4 PREP TIME: 10 mins COOK TIME: 35 mins

Ingredients

  • 1 tablespoon olive oil
  • 4 free range chicken breasts
  • ¾ cup (100g) kalamatta olives, pitted (chopped if you like)
  • 2 big handfuls fresh basil, chopped
  • 1 lemon, juiced and rind finely grated
  • 3 garlic cloves, crushed

Method

  1. Pre heat oven to 190°C.
  2. Pour olive oil onto the base of a medium sized baking dish.
  3. Gently arrange the chicken breasts on the top.
  4. Sprinkle with half the basil leaves and all of the olives, lemon rind and lemon juice.
  5. Gently mix the ingredients with your hands to evenly distribute the basil, olives, lemon rind and lemon juice.
  6. Place in the oven and cook for 20 -25 minutes.
  7. Mix through the remaining basil and serve.
