Chilli Prawns in Lettuce Cups

These delicious and light chilli prawns are a great lunch or snack idea. Using a combination of simple flavours, this prawn recipe is sure to be a winner.

SERVES: 4-6 PREP TIME: 8 mins COOK TIME: 10 mins

Ingredients

  • 200g (18 pieces) fresh or frozen uncooked prawns, shell removed
  • 4 cloves garlic, crushed
  • ½ hot chilli, finely chopped (according to taste)
  • 2 tablespoon olive oil
  • 1 lemon, zest and juice
  • 2 baby gem lettuce bulbs, washed and dried
  • 1 red pepper, sliced into long strips
  • 1 avocado (ripe), sliced into long strips
  • 2 sprigs of spring onion, chopped into small thin angled slices
  • 1 small bunch coriander, washed and loosely chopped

Method

  1. Heat olive oil in a large fry pan on a medium heat, add garlic and chilli and cook for 2-3 minutes until garlic is tender – be careful not to burn garlic.
  2. Add prawns and lemon zest and cook until prawns are cooked.
  3. Remove prawns from pan and place into a bowl.
  4. Fry garlic, chilli and lemon zest until golden then remove from heat and mix in with prawns.

To Serve

  • Add the following to each baby gem lettuce cup:
  • Sprinkle of coriander and spring onion
  • 3 strips of red pepper
  • 2 slices of avocado
  • 3 prawns with some crunchy garlic and chilli
  • A little squeeze of lemon juice, topped off with more coriander and spring onion
  • Place all ingredients into separate bowls and let people make up their own lettuce cups
