Easy flourless blackberry and apple crumble

Want something sweet without the nasty added sugars ? This naturally sweet gluten free and dairy free blackberry and apple crumble is delicious. Such a classic combination that can only be eaten with a grin. A homemade crumble at its best.

SERVES: 4-6 PREP TIME: 15 mins COOK TIME: 30-40 mins

Ingredients

  • 5 medium granny smith apples, peeled and cored – or apple of your choice
  • 500 grams blackberries, washed and dried (frozen blackberries are fine, no need to defrost)
  • 1 lemon, zest
  • 1 vanilla pod, fresh (cut in half and scrape the vanilla out of the pod) or vanilla powder
  • 400 grams ground almonds
  • ½ cup almonds, loosely chopped
  • ½ cup pecans, loosely chopped
  • 3 tablespoons margarine spread, dairy free or a light olive oil.

Method

  1. Pre heat oven at 180° degrees.
  2. Chop the apple into 2cm x 2cm cubes and place in an ovenproof baking dish 21cm x 26cm in size.
  3. Place the blackberries in with the apple and mix through.
  4. Sprinkle the fresh vanilla and lemon zest over the top and give it another mix through then put to one side.
  5. In a medium sized mixing bowl place the ground almonds and dairy free spread or oil.
  6. Making sure your hands are clean gently with your finger tips knead through the dairy free spread or oil with the ground almonds to make the crumble topping.
  7. Now add in the loosely chopped almonds and pecans.
  8. Spread the crumble topping evenly over the top of the blackberry and apple mix.
  9. Place in the oven and bake for 30-40 minutes, until golden and crunchy.
