Ingredients

  • 1 ½ cups quality olive oil
  • 1 ½ cups whole garlic cloves, peeled
  • 1 tablespoon dried chilli flakes or 1 fresh red chilli, diced
  • 1 tablespoon ground turmeric (optional)

Method

  1. On a medium heat add the olive oil in a large saucepan (or wok).
  2. Add the garlic cloves, chilli and turmeric making sure they are gently cooking.
  3. Stir frequently to keep the contents moving, as they become sticky and can stick to the base of the pan and burn.
  4. Cook gently on a medium to low heat until the garlic turns golden and soft - the oil thickens and becomes a little sticky and a heavenly aroma fills the air!
  5. Allow to cool before transferring into an airtight glass container and keep for up to 3 weeks.
