Marinated lamb chops Italian style

Lamb chops in a herb marinade – super simple to prepare and healthy to boot. This marinade tenderises the meat and they are very succulent chops everyone will enjoy. A gluten free recipe that can be easily adjusted for any number of people.

SERVES: 4 people (2 chops each) PREP TIME: 15 mins prep; 12 hours marinating in fridge COOK TIME: 25 mins

Ingredients

  • 8 lamb chops
  • 4 cloves garlic, crushed
  • ½ red onion, very finely chopped
  • 2 tablespoons dried oregano
  • 1 tablespoon dried basil
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 3 tablespoons olive oil
  • Juice of 1 lemon

Method

  1. Put garlic and onion in a bowl and add all the herbs.
  2. Pour in olive oil and lemon juice and mix well.
  3. Using a meat mallet (or rolling pin which works just as well) lightly tenderise the lamb chops.
  4. Rub the marinade all over the chops, cover and keep in fridge overnight.
  5. Heat a tablespoon of the marinade in a frying pan over a medium to high heat.
  6. Fry the chops for 8 minutes on each side, or place in a baking tray in the oven for 25 minutes (turning half way through) at 180°C. These timings can be altered depending on how well cooked you like your lamb to be.
  7. Serve with a simple green salad or steamed greens of your choice.

Inspiration

  • In place of the list of individual herbs you can use an Italian herb mix.
  • Try cooking for longer than you would normally so the fat goes crispy.
  • If fresh herbs are available you may like to use them instead or mix them up with the dried herbs.
  • You can use this marinade with any cut of meat.
  • If baking in the oven, try lining your tray with baking paper for easy clean up afterwards.
