Vibrant apple and pomegranate salad

A quick and easy summer salad that adds colour and vibrancy not just to your eyes but your plate too. The sweetness of the apple and pomegranate are well balanced with fresh parsley and coriander. A delicious salad recipe for one, great for entertaining and a light and super easy work lunch idea.

Ingredients

  • 200g mixed leafy salad greens, washed
  • ½ pomegranate, seeds only
  • 2 small green apples, diced with skin on
  • ½ cup parsley, loosely chopped
  • ½ cup coriander, loosely chopped

Dressing:

  • ⅓ cup olive oil
  • 1 lime, juice only
  • ½ teaspoon cracked black pepper

Method

  1. Take a medium sized bowl and place the washed salad leaves in a bowl.
  2. Add the diced apple and chopped herbs and mix gently so as to not tear the leaves.
  3. Scoop or tap the seeds from the pomegranate, being sure to remove the pith, and sprinkle over the salad. You can save any juices to add to your dressing.
  4. Mix the dressing together and toss through the salad.
  5. Serve fresh straight away.

Inspiration

  • For a fantastic combination and a light meal try this with the Easiest gluten free prawn bites. Or for something a little more substantial go with the Lemon basil chicken and you won’t be disappointed.
  • Although this recipe can be enjoyed on its own, it is also a great complement to almost any protein dish.
  • Adding a handful of roasted seeds gives it a delicious nutty crunch plus a healthy nutritional boost.
