Ingredients

  • ½ cup hulled tahini (can use either hulled or unhulled, hulled is smoother)
  • ½ cup olive oil
  • ¼ cup lemon juice
  • 1 teaspoon curry powder (optional)
  • 1 teaspoon honey (optional)

Method

  1. Place all ingredients together in a food processor or blender and blend until well combined.
  2. Serve alongside your favourite salad or protein.
  3. Keep for up to 1 week in the fridge in an air tight container.

Inspiration

  • This dressing can be made to personal preference when it comes to thickness: to make it thinner add more lemon juice, olive oil or water (if you don’t like it too tangy); for a thicker dressing add more tahini.
  • Try adding other spices like turmeric for variety or combine with avocado for a rich creamier dressing.
