Grilled or bbq salmon skewers

With a delicious herb marinade these grilled salmon skewers make a fantastically simple option to prepare for one or for many. Kebabs are great fun for everyone to get involved with preparing, perfect for bbqs and are a winner for kids meals.

SERVES: 4 (2 skewers each) PREP TIME: 40 mins COOK TIME: 8 mins

Ingredients

  • 2 teaspoons fresh rosemary
  • 2 teaspoons extra virgin olive oil
  • 2 cloves garlic
  • Zest of one lemon
  • 1 teaspoon lemon juice
  • ¼ teaspoon freshly ground pepper
  • 500 grams salmon skinless fillet, cut into 3cm cubes
  • 1 punnet of cherry tomatoes (optional)
  • 8 x 25cm wooden skewers

Method

  1. Soak wooden skewers in water for 30 minutes before using, to stop them from burning.
  2. Prepare the marinade by blending (either in a food processor or with a hand held blender) the rosemary, olive oil, garlic, lemon zest, lemon juice and pepper until you have a smooth paste.
  3. Put the salmon and marinade into a bowl and mix carefully so the salmon is coated – put to one side.
  4. Oil the grill or bbq before turning on to a medium-high heat.
  5. Alternating the salmon and tomatoes, divide among eight 25cm skewers.
  6. Grill or bbq the skewers, carefully turning once, until the salmon is cooked through, 4 to 6 minutes in total.
  7. Delicious served hot or cold, these kebabs go particularly well with guacamole.

Inspiration

  • Great for picnics
  • Instead of lemon try using some lime juice
  • Spice it up with some fresh chilli in the marinade
  • Use other vegetables as well for variation and colour.
