Multi-Purpose oven roasted salmon fillet recipe

This is a multi-purpose roasted salmon fillet recipe! One of those easy meals for dinner and you can also use this baked fish the following day to put it on a salad or in a soup.

SERVES: 4-6 PREP TIME: 20 mins COOK TIME: 20-25 mins

Ingredients

  • 6 fillets fresh salmon
  • 1 dessert spoon oregano – finely chopped
  • 1 dessert spoon tarragon – finely chopped
  • 1 dessert spoon chive – finely chopped
  • 1 dessert spoon dill – finely chopped
  • 2 dessert spoon flat leaf parsley – finely chopped
  • 1 dessert spoon olive oil
  • zest of 1 lemon
  • fresh ground pepper

Method

  1. Turn the oven on and preheat to 150°C.
  2. Take a medium size oven tray and place some oil on the bottom of it then spread evenly around.
  3. Clean and place salmon fillets skin down in a baking tray, sprinkle lemon zest and pepper over the salmon and put to one side.
  4. With each herb finely chop separately then mix together on the chopping board and chop all together. Place in a small mixing bowl and stir gently all the herbs so they are completely mixed in.
  5. Sprinkle the fresh herbs over the fillets of salmon and gently pat down with your fingertips.
  6. Place tin foil over the top of the dish and place in the oven.
  7. Bake slowly on a low heat of 150°C for 20-25 min. Make sure you do not overcook the fillets.
  8. Can be served with a salad and/or vegetables.

Inspiration

  • Add to a soup to make it more sustaining, simply place on top
  • Also delicious when flaked with a fork and added to a frittata, perfect the following day
  • Perfect with this Dairy free basil pesto
