Gluten free banana bread

This scrumptious classic treat with a healthy twist is an excellent recipe for those on a bridging diet. When still craving something sweet, a slice of this gluten free, dairy free and sugar free banana bread will certainly do the trick.

SERVES: 12 slices PREP TIME: 15 mins COOK TIME: 35-45 mins

Ingredients

  • 2 cups almond flour
  • ¼ cup flaxseed meal (linseed meal)
  • 2 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1 tablespoon baking powder
  • ⅔ cup chopped nuts; choose either walnuts, pistachios or macadamia nuts
  • 4 really ripe bananas, mashed well
  • 5 eggs, beaten
  • 2 tablespoons organic honey
  • 1 teaspoon vanilla extract

Method

  1. Preheat oven to 180°C.
  2. Sift the dry ingredients together in a large bowl and put to one side.
  3. In a separate bowl combine the mashed bananas, eggs, honey and vanilla, and mix well.
  4. Make a well in the dry ingredients and pour in the wet ingredients. Stir until combined. Normally with breads or muffin recipes, you don’t want to over mix, but since there’s no gluten here, mix to your heart’s content.
  5. Spray a loaf tin with a good coating of vegetable oil, then pour batter in. Bake for 35-45 minutes, or until a toothpick inserted in the centre comes out clean. Alternatively you can use a silicon loaf tin.
  6. Let it cool slightly and enjoy on its own or with almond butter.
