Best ever roasted broccoli

Oven roasted broccoli is super tasty and filling, alongside being full of nutrients and easy to prepare and cook. Your best kept gluten free secret that is so delicious that people will be surprised how good it is!

SERVES: 4-6 PREP TIME: 10 mins COOK TIME: 45 mins

Ingredients

  • 3 heads broccoli, cut into florets
  • ½ cup olive oil
  • 2 teaspoons black pepper or to taste
  • 2 teaspoons dried red chilli flakes
  • 3 teaspoons of cumin seeds

Method

  1. Pre-heat oven to 180C (fan assisted).
  2. Prepare the broccoli by cutting into smallish florets, around 4cm long.
  3. Arrange the florets evenly on a non-stick baking tray and sprinkle the black pepper, chilli flakes, cumin seeds and olive oil.
  4. Put into the oven and bake for 15 minutes. Give the broccoli a stir and place back in the oven for around another 15 minutes repeat and cook for a final 15 minutes. The cooking time may vary a bit depending on your appliance.
  5. Take the tray out once the broccoli has started to go golden and crisp on the edges ( to achieve the crispness you are looking for it to be more on the well done side of golden).
  6. Serve warm on its own or as a side dish to fish, lamb or chicken.

Inspiration

  • For a complete meal serve alongside some Oven roasted salmon, Lamb shepherd’s pie with hummus twist or Lemon basil chicken.
  • A slight variation try coriander seeds sprinkled over the top before roasting instead of or as well as the cumin seeds.
  • Delicious eaten cold the next day mixed into salad lunches.
  • Best Ever Roasted Broccoli is also great when you cook extra and then re-heat in the oven for 8-10 minutes to go with a following meal.
