  • 1 packet sugar snap peas (approximately 150g)
  • ¾ cup flat leaf parsley, finely chopped
  • ½ cup basil, finely chopped
  • 2 corn cobs, lightly cooked
  • 500g baby cucumbers
  • Olive oil

Salad topping

  • ½ packet small red tomatoes, cut lengthwise into quarters
  • ½ packet small yellow tomatoes (if available), cut lengthwise into quarters
  • 1 avocado, diced

Method

Prepare the quinoa

  1. Place the quinoa in a sieve and wash thoroughly
  2. Add the quinoa and water to a saucepan and bring to the boil
  3. Once boiling, reduce the heat and simmer for approximately 10 minutes until the water has been absorbed
  4. Stir regularly until a light fluffy (not wet) quinoa remains

Prepare the corn

  1. Remove the husks from the corn
  2. Cook the corn cobs in boiling water until tender (this will only take a few minutes)
  3. When ready, rinse under cold water to cool the corn for cutting and dry off with paper towel

Prepare the salad mix

  1. Top and tail the sugar snap peas and cut into thin slices
  2. Add the sugar snap peas, chopped parsley and basil to a large bowl
  3. Slice the corn off the cobs and add to the bowl
  4. Cut the baby cucumbers lengthwise into four and then crosswise into small triangle shapes, add to the bowl
  5. Add the cooked quinoa to the salad
  6. Stir gently and add a generous serving of olive oil to taste

Finish the salad

  1. Transfer the salad and quinoa mix to a flat paella style serving bowl
  2. Top with the tomatoes and avocado
