Spice-coated salmon with grapefruit salad

This absolutely delicious combination of citrus and spiced fish makes an impressive simple salad. It is quick and easy to prepare, great for picnics or entertaining.

SERVES:  4 PREP TIME:  8 mins COOK TIME:  4 mins

Ingredients

  • 4 x 180g salmon fillets
  • ¼ cup olive oil
  • 2 tbs paprika (not spicy hot)
  • 1 tsp cumin
  • 1 tsp chilli powder (optional)
  • 1 lemon, juiced
  • Black pepper
  • 2 pink grapefruits, peeled and segmented
  • 1 cup flat leaf parsley, loosely chopped
  • 1 lemon, cut into wedges for serving

Method

  1. Brush the fish fillets with oil.
  2. Combine the cumin, paprika and chilli and coat the fillets with this spice mix. You can either roll them on a plate, or put the spices and fish in a bag and toss them until coated evenly.
  3. Heat 1 tablespoon of oil in a pan and fry over a medium heat. Cook the fish for 2 minutes on each side until almost cooked through.
  4. Turn off the heat and cover with foil whilst making the salad.
  5. Whisk the lemon juice and remaining 2 tablespoons of olive oil together, seasoning with black pepper.
  6. Place the grapefruit segments and parsley in a bowl and toss with the dressing.
  7. Have fun plating this up – grapefruit on the side or underneath the salmon, lemon wedges strategically placed! It looks beautiful however you do it.

Inspiration

  • Try a different mix of spices – cumin, turmeric, paprika, ground coriander and black pepper work really well.
  • Place the marinated fish in the fridge for a couple of hours to bring out the flavours.
  • Don’t hold back on different combinations of the salad, watercress or other green salad leaves and avocado.
