Green bean mash

A great alternative to potato mash, colourful and tasty; serve as a side dish or as a brilliant dipping snack for kids.

SERVES: 4 PREP TIME: 5 mins COOK TIME: 25 mins

Ingredients

  • 250g green beans, topped and tailed
  • 3 cloves garlic
  • ¼ cup olive oil

Method

  1. Boil or steam beans until tender
  2. Place the cooked beans in a food processor or blender, with the garlic and olive oil, and blend until smooth
  3. Can be stored in an airtight container in the fridge for up to 3 days.

Inspiration and top tips

  • Adds great flavour to stir fries, serve cold as a dip or add more oil to make a salad dressing
  • Adjust garlic to taste or spice it up with pepper or herbs you love (mint and tarragon work well)
  • Serve with a poached egg on top
