Marinated lamb cutlets with a touch of the middle east

This gluten free lamb cutlet marinade is packed full of spicy flavours and is a very simple, easy recipe that delivers an impressively delicious end result. If you are looking for a dinner party recipe it is sure to go down well.

SERVES: 4 PREP TIME: 15 mins + marinating time COOK TIME: 16 mins in a pan or 25 mins in the oven

Ingredients

  • 4 cloves garlic, crushed
  • ½ red onion, finely sliced
  • 2 tablespoons dried coriander
  • 2 tablespoons dried cumin
  • 1 tablespoon dried chilli
  • 1 tablespoon smoked paprika
  • ground black pepper
  • olive oil
  • juice of 1 lemon
  • 8 lamb cutlets, boned

Method

  1. Place all the ingredients, except for the lamb, in a bowl and mix them thoroughly.
  2. Using a meat mallet lightly tenderise the meat, then rub the marinade into the meat. Cover and keep in the fridge for at least an hour - the longer the better and overnight is brilliant.
  3. Pan fry for 8 minutes on each side or place on a baking tray for 25 minutes at 180°C – these cooking times can be varied depending on how you like your lamb to be cooked.
