Lamb love bomb patties

For an extra dose of love in the kitchen, these juicy and delicious, flavoursome patties are to be enjoyed all year round.

SERVES:  6-8 people PREP TIME:  15 mins COOK TIME:  20 mins

Ingredients

  • 2kg lamb mince
  • 20 spring onions, finely sliced
  • 250g pre-cooked quinoa
  • Juice of 2 limes
  • 100g fresh basil, chopped
  • 100g fresh coriander, chopped
  • 2 teaspoons ground cumin
  • 2 teaspoons ground black pepper
  • Olive oil for frying

Method

  1. Place all ingredients in a large bowl and mix thoroughly.
  2. In your hands (gloves optional) shape the mix into whatever size patties you want.
  3. Heat two tablespoons of olive oil in a large frying pan and fry the patties until cooked through and crispy golden on both sides; repeat with fresh oil for each batch.
  4. Serve warm on a bed of salad or in pitta bread with mayo and salad for an awesome picnic option.

Inspirations and top tips

  • These are great for freezing raw or pre-cooked.
  • Keep them bite size for a brilliant canapé and serve with Spinach and kaffir lime leaf dip
  • Mix it up with the ingredients and make your own signature patties. For example, fresh spinach leaves, red capsicum and fresh mint would work really well.
