Green mint dressing

A great dressing recipe to bring any meal alive or drizzle over your favourite salad; this light and refreshing condi-ment goes particularly well with lamb or fish.

SERVES: 4-6 PREP TIME: 10 mins COOK TIME: 40 mins

Ingredients

  • 1 large bunch fresh mint
  • 1 large bunch parsley
  • 1 medium mild red chilli, de-seeded and finely chopped
  • 2 tablespoons olive oil

Method

  1. Place the mint and parsley in a food processor or blender and blend for 1 minute.
  2. Add the olive oil and chilli and blend until well combined.
  3. This dressing can be stored in an air tight container for up to 5 days.

Inspiration and top tips

  • Add more olive oil if you prefer a thinner dressing
  • Use coriander or basil instead of, or as well as, parsley and substitute the red chilli for a green one to keep the colour really sharp
  • Add a little bit of lemon or lime for some zing and/or spice it up with some garlic
