Amazing crab salad

Light, fresh, quick and simple to make, this recipe will touch the hearts and tummies of all those who come anywhere near it (even those who think they don’t like salad)

SERVES:  2 PREP TIME:  20 mins

Ingredients

  • 4 spring onions, very finely sliced diagonally
  • Juice of one lime
  • 20 mint leaves, finely sliced
  • Half a cucumber, peeled, deseeded and finely sliced on the diagonal
  • ½ teaspoon freshly ground black pepper
  • 4 tablespoons olive oil
  • 1 large avocado, finely sliced
  • 100g fresh crab meat
  • 100g lamb’s lettuce
  • 30g flax seeds, dry roasted (optional, for some extra crunch)

Method

  1. Place the spring onions and lime juice into a bowl, mix gently and set aside whilst chopping the mint leaves.
  2. Add the mint leaves, cucumber, pepper and oil, combining all together.
  3. 20 minutes before serving add the avocado, crab meat and lamb’s lettuce mixing well.
  4. Top with the flax seeds (if using them) and serve at room temperature.

Inspiration and top tips

  • Crab can be expensive, but this salad is so gorgeous you will want it frequently and you can use leftover cooked fish, chicken or lamb instead (super yummy when re-fried to crispiness)
  • Depending on your taste you can add more lime juice, oil, pepper or a few chilli flakes for the intrepid
  • If you have a spiralizer in your kitchen, have fun using that to prepare the cucumber
