Almond, orange and sesame energy balls

These delicious energy balls are super nutritious, packed with protein and a tasty alternative sweet snack; but beware they are super moreish!

SERVES: 20 PREP TIME: 25 mins COOK TIME: 3 mins

Ingredients

  • ½ cup pecan nuts
  • 2 cups whole almonds
  • 1 cup (about 12 dates) plump Medjool dates, pitted
  • 1 teaspoon vanilla powder or extract
  • 1 heaped tablespoon tahini
  • Zest from 1 orange
  • Juice from half an orange
  • ¼ cup toasted sesame seeds for coating

Method

  1. Gently roast the pecans in the oven on 180°, tossing regularly, for about 8 minutes or until fragrant but not browned. Set aside to cool.
  2. When cool place pecans in a food processor, add the almonds and blend till it is fine.
  3. Add the dates and vanilla, process until smooth and combined.
  4. Add the tahini, orange zest and juice, process for another 30 seconds until the mixture starts to bind and making sure not to over blend.
  5. Fill a small bowl with water and another with the toasted sesame seeds.
  6. Keeping your hands slightly wet begin rolling the mixture into small balls, about 1” round.
  7. Then roll each ball in the toasted sesame seeds to coat.
  8. Store in an airtight container in the fridge for up to two weeks.

Inspiration and Top Tips

  • Brazils and hazelnuts are a great alternative to pecans – all nuts work well and can be raw if preferred.
  • Another delicious combination is lemon and dried blueberry, instead of orange and date
  • Makes a great gift if you place in a cellophane bag with a ribbon
