Baked apple nut crunch

These cute little refined sugar free apple pots are great for any time of the day. Delicious straight out of the oven with a dollop of nut crème or just as they are, hot or cold.

SERVES:  2 PREP TIME:  10 mins COOK TIME:  10-15 mins

Ingredients


Filling

  • 1 medium granny smith apple, peeled, cored and chopped into small pieces
  • ¼ teaspoon ground cardamom
  • ¼ teaspoon ground star anise
  • 1½ tablespoons water, apple or orange juice

Topping

  • 2 level tablespoons chopped nuts of choice
  • 1 tablespoon almond meal
  • ½ teaspoon ground cardamom
  • 1 teaspoon ground linseed
  • 1 teaspoon psyllium husk (optional)
  • 1 teaspoon chia seeds

Method

  1. Preheat the oven to 180°C.
  2. Place the filling ingredients in a small saucepan and bring to boil, simmer until the apple has softened.
  3. Place the topping ingredients in a separate bowl and mix together.
  4. Divide the apple mixture between two 8cm ramekins.
  5. Sprinkle on the topping mixture.
  6. Cook for 10-15 minutes.

Inspiration

  • Try a bramley apple instead of granny smith, perhaps add a few berries to the mixture.
  • Increase quantities and make a large pie that you can freeze for future use.
  • Replace water with apple or orange juice and perhaps a few shards of orange peel.
