Banana macadamia ice cream

This lovely banana ice cream recipe is not only a gluten and dairy free dessert, but also free from added sugar. Using just 4 ingredients it’s quick and easy for any occasion.

SERVES: 4 PREP TIME: 2 mins COOK TIME: 0 mins

Ingredients

  • 4 large bananas, (peeled, chopped 2cm pieces, and frozen)
  • ½ cup blueberries, frozen
  • ¼ cup macadamia nuts
  • 1 teaspoon carob powder

Method

  1. Take the pieces of banana and place in a sealed bag then freeze.
  2. Once frozen take from the freezer blueberries and the bananas.
  3. Place all ingredients in a food processer or blender and blend until you have a creamy, smooth consistency.

To Serve

  • Serve with crushed nuts and seeds (macadamia, almonds or sesame seeds or pepitas) on top.
  • Leave out the carob for a less sweet variation.
  • Experiment using other berries or just banana.
  • Have as an after-school snack or breakfast on a hot day.
