Cucumber tuna tubes

This simple kids’ recipe is easy and fun to make together. Great finger food, no cutlery needed and suitable for packed lunches as well as food on the go.

SERVES:  4 PREP TIME:  15 mins

Ingredients

  • 3 cucumbers, cut into 10cm sections ready for de-seeding
  • 1 x 200g can tuna
  • 1 red pepper, deseeded and finely chopped
  • 1 medium carrot, grated
  • 1 tablespoon hummus
  • Small bunch coriander, finely chopped (optional)

Method

  1. Hollow out the sections of cucumber with an apple corer.
  2. In a bowl mix the rest of the ingredients together until well combined.
  3. With a teaspoon or gloved hands fill the cucumber tubes with the mixture.

Inspiration and top tips

  • Peel the cucumbers prior to deseeding if you prefer them skinless.
  • Add your own favourites to the tuna – sweetcorn, spring onions and fresh chillies all work well.
  • Add different herbs or spices like turmeric, black pepper, chilli flakes, chives or oregano.
