Fresh herbs, cucumber and chilli dip

Lovely summer dip that works with everything or even as a cold soup.

SERVES: 4 PREP TIME: 10 mins

Ingredients

  • 1 large cucumber continental or 4-6 Lebanese (peeled – optional)
  • 2 bunches fresh basil
  • 1 bunch flat leaf parsley
  • 150 grams baby spinach
  • 2 green chillies, deseeded and finely chopped
  • 1 clove garlic, finely chopped

Method

  1. Place all ingredients into a food processor or blender and blend till well combined
  2. Store in an airtight container in the refrigerator for up to 4 days

Inspiration and top tips

  • Lebanese cucumbers tend to be sweeter and work well with this recipe
  • For a creamier version add tahini and/or nut butter
  • Try adding fresh dill, coriander, sunflower seeds… the combinations are endless
