Mint and lemongrass tea

A refreshing vitalising infusion that is so simple to make and a great alternative to our caffeine habit.

SERVES: 2 cups PREP TIME: Max. 5 mins COOK TIME: 3 mins

Ingredients

  • 20 medium mint leaves
  • 2 stalks of lemongrass
  • 600mls boiling water

Method

  1. Slice the mint leaves in half to release the flavour.
  2. Trim and slice the lemongrass in half, lengthways and then finely diagonally.
  3. Place in a pot, add the boiling water and allow to infuse for a few minutes.

Inspiration and top tips

  • Adjust amounts to taste; if you like a stronger mint flavoured cup, add more leaves
  • Put cooled tea into ice cube trays and freeze. Use on a hot day in a glass of water
  • Trying adding a wedge of lemon, or chilli flakes or peppercorns to spice it up
