Sweet or Savoury almond cookies

With their light, fluffy texture, these cookies are a hit with all ages, making them ideal for any occasion and interestingly they work as a sweet or savoury.

SERVES: 12-15 Cookies PREP TIME: 5 mins COOK TIME: 15-20 mins

Ingredients

  • 2 cups almond meal
  • 2 teaspoons gluten free baking powder
  • 2 eggs
  • ⅓ cup dairy free spread

Method

  1. Pre-heat the oven to 175°C.
  2. Place all of the ingredients in a food processor or a blender and blend until well combined.
  3. Using a dessert spoon, place a dollop of the mixture onto a greased baking tray, gently pressing down each one with the back of the spoon to form a cookie.
  4. Place in the oven for 15-20 minutes or until golden. To ensure even cooking, turn halfway through.
  5. Store in an airtight container for up to 2 days.

Inspiration and top tips

  • Great for lunch boxes and picnics these cookies can be enjoyed on their own, alongside dessert or with a savoury dip… properly delicious served warm!
  • If you prefer a sweet cookie add ¼ cup honey to the mixture
  • Jazz up the savoury with a teaspoon of dried herbs, pepper and chilli
  • Try adding either lemon or orange zest, dried fruits or crushed nuts for an alternative texture or taste
