Baked apples with nut filling

With lovely rich flavours, this is an easy to prepare quick apple dessert and is one of those recipes that is as delicious as it is good for you. It’s so good you might want to make double the recipe and have it for breakfast the next day!

Ingredients

  • 1 tablespoon dairy free spread or olive oil
  • 4 large cooking apples, cored
  • 8 dates, chopped very finely (optional)
  • 1 tablespoon macadamia nuts, chopped coarsely
  • 4 tablespoons pistachios, chopped coarsely
  • 8 brazil nuts, chopped coarsely
  • 1 dessertspoon vanilla powder
  • 2 tablespoons almond meal
  • 1½ cups apple juice
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped roasted pecans
  • 4 large fresh mint leaves

Method

  1. Preheat oven to 180°C.
  2. Using the dairy free spread or oil, grease a medium baking dish.
  3. Peel the apples, removing the cores, then cut into horizontal slices and place the apples back in their ‘apple’ shape in the baking dish.
  4. Place the dates, macadamia, pistachios, brazil nuts, vanilla, almond meal and ½ a cup of the apple juice into a bowl and mix well.
  5. Stuff the apples with the nut filling, piling any remaining on top.
  6. Pour the lemon juice and remaining apple juice over the apples gently so as to not disturb the nuts.
  7. Cover the baking dish with foil and place on the middle shelf in the oven.
  8. Bake for 30 minutes covered, then remove the foil and bake for a further 10-15 minutes or until the nuts are dark brown - the apples should still be firm and have a slight crunch.
  9. Serve the apples with crushed roasted pecans and mint.

Inspirations and top tips

  • Delicious served hot with a nut cream or cold on top of other fruit, nuts or cereal.
  • Adapt this recipe to make apple crumble. Simply place sliced apples in a baking tray and use the nut mixture as the ‘crumble’ topping.
  • This is a great way of using up windfall apples when they are plentiful. Freeze the apples and then make the topping as and when required.
