Caramelised okra, tomato and onion

Bursting with sweet Indian flavours this dish is a great accompaniment to any simple meat or fish dish and alongside a salad for a vegetarian option.

SERVES:  2 PREP TIME:  5-10 mins COOK TIME:  20 mins

Ingredients

  • 2 tablespoons olive oil
  • 1 medium-sized red onion, finely sliced
  • 175g okra, sliced diagonally with stalks removed
  • 8 cherry tomatoes, quartered
  • ½ teaspoon turmeric
  • 1 teaspoon ground cumin
  • ½ cup water

Method

  1. In a large frying pan, heat the olive oil, add the onion and fry gently until golden.
  2. Add the okra and let it soften for a few minutes.
  3. Then add the tomatoes and spices and stir together.
  4. Add the water and continue cooking until well combined and lightly sautéed. Or, if you like things a little caramelised, keep cooking until things get sticky!

Inspiration and top tips

  • Adding cod or salmon to the pan at the same time as the okra makes a complete meal.
  • Instead of okra you could use green beans, bok choy or courgettes/zucchini.
  • Have fun with the flavours and ingredients… more or less tomatoes, adding garlic, different spices etc.
