Cucumber and coriander salad

You’ll love the fresh and fragrant flavours of coriander and lime in this simple cucumber salad recipe. Its versatility makes it great for entertaining and a beautiful accompaniment to any meat or vegetarian dish.

Ingredients

  • 3 medium size lebanese cucumbers
  • 2 cups fresh coriander
  • 1 large ripe avocado (not overly ripe, still with some firmness)
  • 2 teaspoons of red chilli, sliced and remove seeds
  • juice of ½ a lemon (or lime)
  • 2 tablespoons extra virgin olive oil

Method

  1. Cut the cucumbers in half lengthways and then slice into half moon shapes around 3 cm thick.
  2. Loosely chop the coriander so the leaves are still quite large.
  3. Cut the avocado into 1½ cm cubes.
  4. Finely slice the chilli, removing the seeds.
  5. Gently combine all ingredients in a bowl and mix with your hands or a spoon – being careful not to mash the avocado too much.
  6. Dress with the olive oil and lemon juice and mix some more.
  7. Garnish with cracked black pepper.

Inspiration

This salad is super versatile, try using a different herb such as mint, parsley or basil to mix things up a bit.

Make a meal by serving this salad alongside some delicious Chicken pancakes, Crumbed fish or a Vegetable slice.
