Incredible nutty carob bars with seeds and dry fruits

A fruit, seed and nut carob recipe that makes fantastic snack bars; an alternative to chocolate that is naturally dairy free and refined sugar free.

SERVES: 24 x 4cm squares PREP TIME: 15 mins 1 hour for setting COOK TIME: 10 mins

Ingredients

  • 245 grams dairy free and sugar free carob flakes or buttons
  • 180 grams dried sour cherries, raisins or cranberries, loosely chopped
  • 1 cup roasted almonds, loosely chopped (or other nuts of choice)
  • 1 cup sesame seeds, toasted – golden to well done

Method

  1. Place a medium sized pot on a low heat.
  2. Add the carob flakes or carob buttons and melt down stirring regularly (approximately 10 minutes).
  3. Once melted take off the heat and add the dried fruit, almonds and ⅔ of the cup of sesame seeds and mix through gently.
  4. Pour mixture into a baking tray lined with greaseproof paper and spread out evenly.
  5. Sprinkle the remainder of the sesame seeds over the top of the mixture.
  6. Place into the fridge and allow to set for 1 hour.
  7. Slice into pieces, keep in an airtight container and store in the fridge for up to 1 week.
