Pomegranate and mint drink

A thirst-quenching, antioxidant-rich drink filled with the fresh delicate flavours of pomegranate and mint.

SERVES:  5 glasses PREP TIME:  10 mins + 3 hrs cooling

Ingredients

  • 3 large pomegranates
  • 20 mint leaves
  • 1 litre water

Method

  1. Deseed 3 pomegranates.
  2. Crush two thirds of the pomegranate seeds in a bowl to make juice, sieving if necessary to remove any pith.
  3. Pour the juice, water and remaining seeds into a jug.
  4. Roll and squeeze the mint leaves in your hands. Do not cut them. Stir them into the pomegranate squash.
  5. Place jug in the fridge for approximately 3 hours to allow the flavours to infuse.
  6. Serve from the fridge, adding a fresh sprig of mint for decoration.

Inspirations and top tips

  • Add crushed ice or carbonated water
  • Have fun decorating the glasses with cucumber, lemon slices and cocktail umbrellas
  • This is a great drink to prepare with children
