Sugar free lemonade

If you’re looking for a light and refreshing drink for a summer’s day, this simple and zingy refined sugar-free lemonade is a perfect offering for the whole family.

SERVES:  4 PREP TIME:  5 mins COOK TIME:  2 mins

Ingredients

  • 5 lemons
  • 3½ cups cold water
  • ¾ cup of honey

Method

  1. Slice the lemons in half and juice.
  2. Heat half a cup of water in a pan and stir in the honey, then add this to the lemon juice.
  3. Add the remaining water and stir gently.
  4. Add ice to chill and serve immediately. If serving later, cover with a lid/clingfilm and chill in the fridge to keep fresh.
  5. If you are storing this juice in the fridge the lemon flavour will get stronger, so more water can be added before serving – either way, be sure to stir as there will be sediment in the jug.

Inspiration and top tips

  • Add sparkling water after dissolving and cooling the honey in one cup of still water and add slices of lemon, strawberry and sprigs of mint for a beautiful party drink.
  • Serve warm for a soothing drink on a cool day.
  • Pour into lolly moulds, pop into the freezer for a few hours and hey presto, healthy natural lollies for children and adults alike.
