Small green and perfectly formed… peas, who doesn’t love them! Simply add garlic and mint and enjoy this super simple and healthy recipe as a snack or a side.

SERVES:  4 PREP TIME:  5 mins COOK TIME:  15 mins

Ingredients

  • ¼ cup garlic puree
  • 250g frozen peas
  • 1 tablespoon oil
  • 2 teaspoons dry mint
  • 1 tablespoon fresh chopped mint

Method

  1. Mix the garlic puree and peas together and set aside.
  2. In a pan on a low heat, warm the oil.
  3. Add the dry mint and stir before adding the garlicky peas, cooking for a few minutes.
  4. Once the peas are cooked, add and stir through the fresh chopped mint.

Inspiration and top tips

  • Season to taste, try adding paprika and a squeeze of lime prior to serving
  • Serve as a side or eat as a green boosting snack
  • Some garlic purées have added salt so if you want to avoid this simply make your own.
