Three herb dressing

This tasty herb infused dressing can be used as a dip or accompaniment for crudities, burgers, chips, lamb and/or fish… in fact the list is endless for ways to use this super flavoursome dressing.

SERVES: 4 PREP TIME: 10 mins


  • 12-14 leaves fresh oregano
  • 2 sprigs fresh thyme
  • 5 large leaves fresh basil
  • 1 or 2 cloves garlic, crushed or finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon lemon juice


  1. Prepare the herbs by hand, chopping finely, then add them to the other ingredients, or if you are using a small blender/grinder, add all of the ingredients together and blend well.
  2. Store in an airtight container in the fridge.

Inspirations and top tips

  • Try adding finely chopped chillies to spice it up a little
  • Use other fresh herbs like, rosemary, mint or sage for different flavours
  • You can add this to your pre-cooked homemade lamb burger mix, or pour over broccoli before roasting in the oven
