Marinated lamb chops Italian style
Lamb chops in a herb marinade – super simple to prepare and healthy to boot. This marinade tenderises the meat and they are very succulent chops everyone will enjoy. A gluten free recipe that can be easily adjusted for any number of people.

Ingredients
- 8 lamb chops
- 4 cloves garlic, crushed
- ½ red onion, very finely chopped
- 2 tablespoons dried oregano
- 1 tablespoon dried basil
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- 3 tablespoons olive oil
- Juice of 1 lemon
Method
- Put garlic and onion in a bowl and add all the herbs.
- Pour in olive oil and lemon juice and mix well.
- Using a meat mallet (or rolling pin which works just as well) lightly tenderise the lamb chops.
- Rub the marinade all over the chops, cover and keep in fridge overnight.
- Heat a tablespoon of the marinade in a frying pan over a medium to high heat.
- Fry the chops for 8 minutes on each side, or place in a baking tray in the oven for 25 minutes (turning half way through) at 180°C. These timings can be altered depending on how well cooked you like your lamb to be.
- Serve with a simple green salad or steamed greens of your choice.
Inspiration
- In place of the list of individual herbs you can use an Italian herb mix.
- Try cooking for longer than you would normally so the fat goes crispy.
- If fresh herbs are available you may like to use them instead or mix them up with the dried herbs.
- You can use this marinade with any cut of meat.
- If baking in the oven, try lining your tray with baking paper for easy clean up afterwards.
