Gluten free crunchy fried fish

Delicious, crunchy low carb fish nuggets that are gluten free and super simple to make. Using a firm white fish cut into nice chunky pieces guarantees a moist rich protein snack for any meal of the day.

SERVES: 3-4 PREP TIME: 10 mins COOK TIME: 10 mins

Ingredients

  • 1.2kg firm, white fish (snapper, cod, pollack, haddock, cobbler)
  • 250ml (1 cup) peanut oil (enough to cover the pieces of fish when in the pan)

Method

  1. Cut the fish into small strips approximately 5cmx2cm
  2. Pat the fish dry with a paper towel to remove any excess moisture.
  3. Prepare a plate with paper towel to drain cooked pieces of fish.
  4. Heat the peanut oil on high in an approximately 17cm saucepan until you see movement.
  5. Using tongs very gently place fish into the saucepan until the base of the pot is covered but the pieces are not touching.
  6. Cook for 2-3 minutes until the outside is golden brown.
  7. Remove the cooked pieces and place on a paper towel and continue until all pieces are cooked.
  8. Best eaten straight away, to enjoy the crunchy texture

Inspiration
