Oven baked salmon fillets with spinach

Baked with a combination of fresh spinach and a few humble spices, this mouth watering salmon recipe is certainly fit for a king. Simple gluten and dairy free home cooking at its best.

SERVES: 1 fillet per person PREP TIME: 15 mins COOK TIME: 20-25 mins

Ingredients

  • 4 fillets Atlantic salmon (skin on middle pieces work best)
  • 30 grams baby spinach, fresh
  • 6 tablespoons olive oil, preferably extra virgin
  • 1 teaspoon chilli flakes
  • 1 teaspoon turmeric
  • 1 teaspoon paprika

Method

  1. Pre heat oven to 180°.
  2. Select a baking tray that can accommodate all of the fillets.
  3. Pour 4 tablespoons of olive oil on to the baking tray.
  4. Place each fillet on the tray into the oil, skin side down.
  5. Move each fillet gently around the oil to ensure that the skin is well lubricated.
  6. Set each fillet straight on the tray.
  7. Using a sharp knife, score across each fillet into the flesh 4 times – not too deep but deep enough to fill with spinach leaves.
  8. Now take a few spinach leaves and dampen in the excess oil on the tray.
  9. Fill the spinach leaves into created cuts of the fillet.
  10. Combine the turmeric, paprika and chilli flakes in a bowl, and sprinkle along each fillet using as much or as little as you feel.
  11. Place the tray into the hot oven for twenty minutes or until cooked - the skin should be crispy and fillet cooked through.
