    Broccoli, spring greens and spinach soup
Combine broccoli, spring greens and spinach for a delicious and healthy soup that leaves your body feeling nurtured. Have it on its own or with a choice of protein for a substantial meal.
Ingredients
- 4 tablespoons olive oil
 - 6 stalks spring onions
 - 6 garlic cloves, crushed
 - chilli, fresh or dried to taste
 - 1 teaspoon grated fresh nutmeg or powder
 - 1 teaspoon turmeric powder
 - 2 medium broccoli heads, chopped into mini florets
 - 550g spring greens, chopped
 - 250g baby spinach, washed
 - 4 cups water or stock
 - ¼ cup fresh tarragon, chopped
 - ¾ cup flat leaf parsley, chopped
 - 1 lemon, zest and juice
 - Black pepper as desired
 
Method
- Turn a large hob onto medium/high heat.
 - In a large pot place the oil and heat, gently fry spring onions, garlic and chilli for 2-3 minutes stirring occasionally.
 - Add the turmeric, nutmeg and stir in.
 - Then add the broccoli and spring greens and stir in the water/stock so everything is mixed together.
 - Place the lid on the pot and simmer for 10-15 minutes or until the spring greens are tender.
 - Then add the spinach and simmer for a further 2 minutes.
 - Turn the heat off and add the pepper and fresh herbs.
 - Take a hand blender and blend until smooth.
 - Add the lemon zest and juice and blend for a few seconds.
 - Taste and adjust seasoning if required.
