Broccoli, spring greens and spinach soup

Combine broccoli, spring greens and spinach for a delicious and healthy soup that leaves your body feeling nurtured. Have it on its own or with a choice of protein for a substantial meal.

SERVES: 8 PREP TIME: 10 mins COOK TIME: 20 mins


  • 4 tablespoons olive oil
  • 6 stalks spring onions
  • 6 garlic cloves, crushed
  • chilli, fresh or dried to taste
  • 1 teaspoon grated fresh nutmeg or powder
  • 1 teaspoon turmeric powder
  • 2 medium broccoli heads, chopped into mini florets
  • 550g spring greens, chopped
  • 250g baby spinach, washed
  • 4 cups water or stock
  • ¼ cup fresh tarragon, chopped
  • ¾ cup flat leaf parsley, chopped
  • 1 lemon, zest and juice
  • Black pepper as desired


  1. Turn a large hob onto medium/high heat.
  2. In a large pot place the oil and heat, gently fry spring onions, garlic and chilli for 2-3 minutes stirring occasionally.
  3. Add the turmeric, nutmeg and stir in.
  4. Then add the broccoli and spring greens and stir in the water/stock so everything is mixed together.
  5. Place the lid on the pot and simmer for 10-15 minutes or until the spring greens are tender.
  6. Then add the spinach and simmer for a further 2 minutes.
  7. Turn the heat off and add the pepper and fresh herbs.
  8. Take a hand blender and blend until smooth.
  9. Add the lemon zest and juice and blend for a few seconds.
  10. Taste and adjust seasoning if required.


For a more substantial meal serve alongside the mouthwatering Oven roasted salmon
